Bibb Salad with Avocado, Pea Shoots and Sunflower Seeds

Ingredients

  1. 1 scallion, thinly sliced
  2. 3 tablespoons extra-virgin olive oil
  3. 1 1/2 tablespoons fresh lemon juice
  4. Kosher salt and freshly ground pepper
  5. 1 large head bibb lettuce, torn into bite-size pieces
  6. 1 cup pea shoots
  7. 1 Hass avocado, cut into 1/2-inch dice
  8. 1/2 cup grape tomatoes, halved
  9. 1/4 cup salted, roasted sunflower seeds

Directions

  1. In a mini food processor, puree the scallion with the olive oil and lemon juice until smooth. Season with salt and pepper.
  2. In a large bowl, toss the lettuce with the pea shoots, avocado, grape tomatoes and sunflower seeds. Pour the dressing over the salad, toss and serve.
