Served up to great response...Roasted tomatoes have unique, intense and sweet flavor...Personally I prefer bread with Insalata Caprese on top...REMEMBER to preheat your oven to 300F and give 1.5 hours to roast tomatoes...

Didn't read ahead to realize the tomatoes needed to cook for an hour and 25 minutes, but well worth the wait. These were delicious!

A big hit at our table.  I didn't have fresh ricotta but added approx. 25% heavy cream to the packaged ricotta to make it creamier and give it a little freshness.
