Yogurt Panna Cottas with Honey

The Good News Thick and creamy Greek-style yogurt contains bacteria cultures that may aid in digestion and strengthen the immune system. As an homage to her Greek heritage, Marisa Churchill uses it as the base for her tangy, low-fat panna cottas.

Ingredients

  1. 1 1/2 teaspoons unflavored gelatin
  2. 1 tablespoon water
  3. 1 cup fat-free milk
  4. 1/3 cup sugar
  5. 1 cup low-fat buttermilk
  6. 1 cup fat-free plain Greek yogurt
  7. 2 tablespoons honey
  8. Red grapes, for serving

Directions

  1. In a small bowl, mix the gelatin with the water and let stand until softened, about 5 minutes. In a small saucepan, bring the milk to a simmer with the sugar and cook until the sugar is dissolved, about 1 minute. Remove from the heat and stir in the softened gelatin until dissolved.
  2. In a medium bowl, whisk the buttermilk with the yogurt. Whisk in the warm milk until smooth. Pour the panna cotta mixture into six 4-ounce ramekins and refrigerate until set, about 3 hours.
  3. To serve, drizzle the panna cottas with the honey and garnish with the grapes.

    One Serving 120 cal, 0.4 gm fat, 0.3 gm sat fat, 24 gm carb, 0.1 gm fiber.

I know some people think that low-fat has no taste.  I am a fan of trying to make things healthier while also tasting good.  This recipe was SO easy.  I didn't have buttermilk so i used skim milk with a couple tablespoons of half and half (which in total, has about the same amount of fat as an equal amount (1 cup) of low fat buttermilk) and the juice of a quarter of a lemon(all equaling 1 cup).  It set up just fine in the fridge.  I covered it with plastic wrap while it set.  I served it with halved grapes, sliced strawberries, and a drizzle of honey.  Fresh, light and delicious.
